Pork Vindaloo (Rishads recept)

Nu ska vi laga mat till Hunserödarna. Det blir det här idag.

2 kg pork meat in cubes

5-6 onions chopped
4 red chilis, dry
1 red chili, fresh
3 tsp chili powder
2 tsp coriander
2 tsp cumin
1 tsp turmeric
3 cardamums
2 tsp cinnamon
3-4 cloves
5-6 pepper corns
2 tsp sugar
1 inch ginger
5-6 garlic

dry roast the onion i a pan, add spices

mix in mixer

3 tbsp vinegar

blend to a fine paste

rub it into the meat, marinate at least 6 hours, over night

heat up the meat with all spices

add 1-2 cups (cover the meat)

cook for 2-3 hours over slow fire
